It's chocobo, as in, choke. They say the actual word in the games. Not sure what it is in Japanese.
It's spelled Chocobo, and I think it was pronounced like "choke-oh-bow" in FFX.

Yeah. Kiyuri from FFX says "Choke-a-bow" That's what I always went with.
I always pronounce it with the "CH" sound.

I've always pronounced it choke-uh-bow. I remember reading for the first time somewhere on Gamespot's wonderful boards a big rant about how it's pronounced similar to chocolate like "chawk-uh-bow" and the characters in X were saying it wrongIt was kinda weird because I've never even thought of pronouncing it another way.
Anyway, we've heard the word voice-acted now, not much to debate about I dun think.

They've canonically established this and it's only ever been pronounced this way.
