My favourite movie soundtrack is The Land Before Time by James Horner. It has very beautiful and memorable themes, complex orchestration and a nice children's choir that adds a touch of magic, not to mention the soundtrack also has one of the best songs ever, the emotional "If We Hold on Together". The are some sad tracks such as "Whispering Winds" which truly create a somber mood, and the counterpoint is action like in the track "Sharptooth and the Earthquake", and the themes are used in a clever way, making the score truly a grand one.

There are other soundtracks I like as well, but there are too many to list, so I mention just a few: The Lord of the Rings Trilogy (gotta love the thematic complexity and operatic proportions which Howard Shore used in the three LotR scores, especially now that we finally realize the monumental task as we get our hands on the Complete Recordings of the said scores), Star Wars Original Trilogy (episodes IV-VI are very nice and get more and more complex with each soundtrack, and although the prequel scores are nice too they just don't reach the thematic beauty of the originals), Jurassic Park (Williams shows his skill in the score of the first JP film and introduces us to some memorable choral and instrumental themes not to mention some thrilling action cues), The Lion King (it has nice songs and the score itself is easily Zimmer's best work ever if you've got your hands on the complete score and can hear the thematic development in its full glory; he establishes many themes and offers us variations of the themes while introducing some nice musical bits into his score, and he also includes African elements to the mix), and Bambi (one of Disney's best soundtracks with the beautiful choir, memorable themes and songs and the awesome instrumentalization).

I could keep the list going and going, because there are so many great examples of good soundtracks, but so far none of them, not even LotR (although it's a strong candidate because of its thematic complexity) has come close to the orchestral and choral beauty of The Land Before Time.

Donnie Darko, Requiem For A Dream, Man On Fire (the last song on there is great), and the Underworld soundtracks all come to mind.

8-Mile or Donnie Darko.

As for animated films, Akira hands down.

I would have to say the Matrix Trilogy. I think both Juno Reactor and Rob Dougan rock. Together, they pwn. Tunes like Neodammerung, the edited version Navras, and so many others. And there are more tranquil songs too, and sad ones, like the one plays at the end of the trilogy (no spoilers).

Most of what Hans Zimmer has made, The Matrix soundtracks (though mostly from the first movie), Donnie Darko, the Spider Man ones are good too, but I don't have it o my PC so I don't really know if it's awesome.
