What would it look like if Cloud fought with both the Buster Sword and the Fusion Sword together at once? How would his fighting style change if he wielded two giant swords in battle instead of one?

Yep, at several points he uses separate parts of the big sword, detached from each other - during the Forgotten City fight, against Bahamut, Kadaj and Sephiroth. It's actually quite rarely that he ever uses the entire thing with all its component swords integrated.

The Buster Sword is (I'm assuming) made of a far heavier material than the Fusion Sword, meaning that he'll probably be incredibly unwieldy and would've been an easy target for Kadaj and gang.

That kind of fan service would have been very unnecessary.
