how to turn monsters udead?

I heard you could turn enemies undead and then use a pheonix down to kill them. Can someone tell me how to turn a monster undead? Thanks in advance.

Target your attack on a monster then quikly put a phoenix down a it, you will get lots of exp, gil and items(the monster has to be dead)
